Evaporation needed to turn tomato juice into paste. Enter the juice mass and Brix plus the target Brix to get the finished paste and the water to evaporate.

Try sample values — fills the form with the worked example below.

–
Finished paste (kg)
–
Water to evaporate (kg)
–
Yield (%)
Equation: Solids = juice × juice Brix ÷ 100. Finished paste = solids ÷ (target Brix ÷ 100). Water evaporated = juice − finished paste. Yield % = finished paste ÷ juice × 100.
Method: Soluble-solids mass balance for processed tomato concentrates, Codex CXS 57 (processed tomato concentrates); Brix by AOAC 932.12.
Assumptions: Only water evaporates, so all soluble solids stay in the paste; Brix was measured on the same juice.
Limitations: Does not cover viscosity, colour or flavour change during evaporation, or the heat load of the evaporator.
Rounding: Masses and yield to 2 decimal places. Intermediate values are not rounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: 100 kg juice at 5 °Brix concentrated to 28 °Brix. Solids = 5 kg; finished paste = 5 ÷ 0.28 = 17.86 kg; water evaporated = 82.14 kg; yield 17.86 %.

Enter values above to see results.

Tomato paste is usually 24 % soluble solids or more. Confirm the finished Brix with a refractometer before packing. Tool 170 of 500 — GIFSQ
