Break a fat down into saturated, monounsaturated, polyunsaturated and trans shares, as the label and the literature report them.
Try sample values — fills the form with the worked example below.
–
Total fatty acids (g)
–
Saturated (%)
–
Unsaturated (%)
Equation: Total = saturated + monounsaturated + polyunsaturated + trans. Each share (%) = class ÷ total × 100. Unsaturated (%) = (monounsaturated + polyunsaturated) ÷ total × 100.
Method: Fatty acid classes as declared under US FDA 21 CFR 101.9(c)(2), EU Regulation 1169/2011 Annex XV and Codex CXG 2-1985; composition by gas chromatography (AOAC 996.06) in the laboratory.
Assumptions: the four classes entered cover all fatty acids in the fat; amounts are in the same unit and for the same quantity of fat.
Limitations: this tool does not split polyunsaturated fat into omega-3 and omega-6, and it cannot detect trans fat formed during processing — that needs analysis.
Rounding: shares to 1 decimal place; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.

Worked example: Saturated 10 g, monounsaturated 40 g, polyunsaturated 30 g, trans 1 g: total 81.0 g, saturated 12.3%, polyunsaturated 37.0%, trans 1.2%, unsaturated 86.4%.

Trans fat is declared separately on US and Canadian labels; the EU does not require trans fat on the nutrition declaration. Tool 370 of 500 — GIFSQ
