Labour hours per month
Equation: Tasks per week = daily tasks × 7 + weekly tasks. Tasks per month = daily tasks × 30 + weekly tasks × 4 + monthly tasks. Labour hours per month = tasks per month × average minutes per task ÷ 60.
Method: Sanitation scheduling per the sanitation prerequisite programme in Codex CAC/RCP 1-1969 (Rev. 2020) and the cleaning and sanitation programmes in ISO/TS 22002-1:2009 (prerequisite programmes on food safety for food manufacturing). The 30-day month and 4-week month are the tool’s stated planning assumptions.
Assumptions: each task is counted once in its frequency band; the average time is the mean across all tasks.
Limitations: the schedule counts tasks and hours — it does not set which chemicals, concentrations or contact times to use; those come from the chemical supplier’s instructions and the site’s validation.
Rounding: task counts are whole numbers; hours to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: 6 daily, 4 weekly and 2 monthly tasks at 20 minutes each: 46 tasks per week, 198 tasks per month, 66.00 labour hours per month.

Check the schedule against the master sanitation schedule each month — a task that is never done is worse than a task that was never scheduled. Saved on this device only. Tool 254 of 500 — GIFSQ
