Work out the preservative for a batch from the target dose in mg/kg, correcting for the purity of the commercial product, and check the dose against the Codex GSFA limit you enter.

Try sample values — fills the form with the worked example below.

Of the limit used (%)
Equation: Pure preservative (mg) = dose (mg/kg) × batch (kg). Commercial product (g) = pure (mg) ÷ (purity ÷ 100) ÷ 1,000. Limit used (%) = dose ÷ maximum limit × 100.
Method: Preservative dosing against the maximum level in the Codex General Standard for Food Additives CXS 192-1995 for the food category. Example Codex limits differ by category — sorbic acid and benzoic acid limits, for instance, are set per food category in the GSFA, and the EU (Regulation 1333/2008) and US (FDA 21 CFR) limits can differ. Enter the limit for your exact food category and jurisdiction.
Assumptions: the preservative is evenly mixed through the batch; purity is the assay of the commercial product as supplied.
Limitations: dose alone does not guarantee preservation — pH, water activity, temperature and the target organisms decide effectiveness, and the limit entered must be confirmed in the regulation.
Rounding: pure and commercial weights to 2 decimal places; limit used to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: A 100 kg batch at 500 mg/kg with a 100% pure product: pure preservative = 500 × 100 = 50,000 mg (50.00 g); against a Codex GSFA limit of 1,000 mg/kg that is 50.00% of the limit.
