Salt percentage of a pickle brine and the salt needed for a target strength. Enter the water, vinegar and salt to check the brine before pouring.

Try sample values — fills the form with the worked example below.

–
Salt in brine (%)
–
Salt needed for target (g)
–
Total brine (L)
Equation: Salt % (w/w) = salt ÷ (salt + liquid) × 100, with liquid = water + vinegar at 1 g per mL. Salt needed for a target % = target ÷ (100 − target) × liquid mass.
Method: Brine mass balance for pickled vegetables, Codex CXS 260 (pickled fruits and vegetables). For the full brine engine see the GIFSQ specialist tool Syrups and Brines for Canning (post 30977).
Assumptions: Water and vinegar both weigh 1 g per mL; all salt dissolves; the brine is mixed before measuring.
Limitations: Salt % alone does not make a safe pickle — acidity, heat treatment and storage matter too, and this tool does not cover them.
Rounding: Salt % to 2 decimal places; salt mass to 2 decimal places. Intermediate values are not rounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: 1 L water, no vinegar, 50 g salt, target 5 %. Salt % = 50 ÷ 1,050 × 100 = 4.76 %; salt needed for 5 % = 5 ÷ 95 × 1,000 = 52.63 g.
