Meat and Seafood Batch Traceability

GIFSQ Tools · Module 08 — Meat, Poultry, Fish & Seafood · Tool 160 of 500

Reconcile a meat or seafood batch: enter the batch code, the weight received and the weights shipped, still in stock and wasted to check the mass balance and trace the batch.

Try sample values — fills the form with the worked example below.

Accounted (kg)
–
Unaccounted (%)
–
Status
Equation: Accounted (kg) = shipped + still in stock + waste and trim. Unaccounted (kg) = received − accounted. Unaccounted (%) = unaccounted ÷ received × 100. The batch balances when the unaccounted share is within 0.50% of the received weight.
Method: Batch mass-balance traceability for meat and seafood, following the traceability principles of Codex CAC/GL 60-2006 and the one-step-back, one-step-forward record keeping required by the Safe Food for Canadians Regulations: every kilogram received must be accounted for as shipped, in stock or wasted, under one batch code.
Assumptions: all four weights cover the same batch code and the same period; the waste figure includes trim, drip and condemned product; the weighings are on the same scale.
Limitations: a balanced mass check proves the arithmetic, not the traceability — supplier lots, internal transfers and customer shipments must also be linked to the batch code in the records; the 0.50% band is a house guide, not a regulatory limit.
Rounding: accounted and unaccounted weights to 2 decimal places; unaccounted share to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: Batch BEEF-2026-1106-A: received 1000 kg, shipped 850 kg, still in stock 100 kg, waste 45 kg. Accounted = 850 + 100 + 45 = 995 kg; unaccounted = 1000 − 995 = 5 kg (0.50%) — balanced.
