Reconstitute juice concentrate to single-strength juice. Enter the concentrate mass and Brix plus the target Brix to get the water to add and the finished juice.
Try sample values — fills the form with the worked example below.
–
Finished juice (kg)
–
Water to add (kg)
–
Reconstitution ratio (1 part in)
Equation: Finished juice = concentrate × concentrate Brix ÷ target Brix. Water to add = finished juice − concentrate. Ratio = finished juice ÷ concentrate.
Method: Soluble-solids mass balance for reconstituted juice, Codex CXS 247 (fruit juices and nectars); Brix by AOAC 932.12.
Assumptions: Only water is added; soluble solids are conserved; water weighs 1 kg per L.
Limitations: Does not restore aroma, colour or flavour lost in concentration; reconstituted juice is labelled as such where the law requires it.
Rounding: Masses and ratio to 2 decimal places. Intermediate values are not rounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.

Worked example: 10 kg concentrate at 65 °Brix reconstituted to 11.5 °Brix. Finished juice = 10 × 65 ÷ 11.5 = 56.52 kg; water to add = 56.52 − 10 = 46.52 kg; ratio 1 in 5.65.
Enter values above to see results.
Reconstituted juice should match the Brix of the original single-strength juice. Check the finished Brix with a refractometer. Tool 173 of 500 — GIFSQ
