Sugar needed to hit a jelly Brix target. Enter the juice and its Brix, plus any sugar already added, to get the finished Brix and the sugar still to add.

Try sample values — fills the form with the worked example below.

–
Finished Brix (°Brix)
–
Sugar still to add (kg)
–
Batch at target (kg)
Equation: Soluble solids now = juice × juice Brix ÷ 100 + sugar added. Finished Brix = solids now ÷ (juice + sugar added) × 100. Total sugar for the target = juice × (target − juice Brix) ÷ (100 − target).
Method: Soluble-solids mass balance for jelly, Codex CXS 296 (jams, jellies and marmalades); Brix by AOAC 932.12 (refractometer).
Assumptions: All sugar dissolves; no water evaporates before the measurement; juice Brix was measured on the same juice.
Limitations: Pectin, acid and setting behaviour are not covered; the target must be above the juice Brix, or water must be evaporated first.
Rounding: Brix to 2 decimal places; masses to 2 decimal places. Intermediate values are not rounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: 10 kg juice at 10 °Brix, no sugar added, target 65 °Brix. Total sugar needed = 10 × (65 − 10) ÷ 35 = 15.71 kg; batch at target = 25.71 kg.

Enter values above to see results.

Jelly is usually finished at 65 % soluble solids. Add the sugar in stages and confirm with a refractometer before pouring. Tool 167 of 500 — GIFSQ
