GIFSQ Tools · Module 11 — Ingredients, Additives & Formulation · Tool 201 of 500
Find any ingredient as a percentage of the total batch, in grams per kilogram, and the weight of everything else in the batch.
Try sample values — fills the form with the worked example below.
–
Ingredient (%)
–
Grams per kg
–
All other ingredients (g)
Equation: Ingredient (%) = ingredient weight ÷ total batch weight × 100. Grams per kg = ingredient ÷ total × 1,000. Other ingredients = total − ingredient.
Method: Formulation mass balance. Percentages are by weight (w/w), the basis used for ingredient lists under Codex CXS 1-1985, General Standard for the Labelling of Prepackaged Foods, which lists ingredients in descending order of weight.
Assumptions: all weights are on the same basis (as added, before any processing loss); water added during processing is counted if it is part of the batch weight.
Limitations: percentages do not allow for moisture or yield loss during processing — the finished product percentage can differ from the as-mixed percentage.
Rounding: percentage to 2 decimal places; grams per kg to 2 decimal places; other ingredients to 1 decimal place; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.

Worked example: 25 g of salt in a 1,000 g batch: 25 ÷ 1,000 × 100 = 2.50%, or 25.00 g per kg; the other ingredients weigh 975.0 g.
Enter values above to see results.
Use the same percentage basis for every ingredient in a formula, and check that the percentages add to 100%. Tool 201 of 500 — GIFSQ
