Work out ice cream overrun from the weights of mix and frozen ice cream in the same container, plus both densities.

Try sample values — fills the form with the worked example below.

–
Overrun (%)
–
Mix density (g/mL)
–
Frozen density (g/mL)
Equation: Overrun (%) = (mix weight − frozen weight) ÷ frozen weight × 100, both weighed in the same container. Density (g/mL) = weight (g) ÷ volume (mL).
Method: Overrun by the standard weight method: the same container is weighed full of mix and full of frozen ice cream (ice cream total solids by ISO 3728, IDF 34). The air beaten in during freezing is the difference.
Assumptions: both weighings use the same container filled to the same level; the mix and the frozen product are at the stated volume.
Limitations: the method measures the average overrun of the container, not the overrun at the freezer outlet; a partly filled container or a different fill level skews the result.
Rounding: overrun and densities to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: 200 g of mix and 120 g of frozen ice cream in a 200 mL container. Overrun = (200 − 120) ÷ 120 × 100 = 66.67%; mix density = 1.00 g/mL; frozen density = 0.60 g/mL.

Enter values above to see results.

Ice cream overrun is typically 50–100%; premium ice cream is often lower, near 20–50%. Tool 136 of 500 — GIFSQ
