Split a total hydrocolloid dose between two gums in the blend ratio you choose, and get each gum weight for the batch.

Try sample values — fills the form with the worked example below.

–
Total hydrocolloid (g)
–
First gum (g)
–
Second gum (g)
Equation: Total hydrocolloid (g) = total dose (%) × batch (kg) × 10. First gum (g) = total × first-gum share ÷ 100. Second gum = total − first gum.
Method: Hydrocolloid blend dosing: the total dose and the blend ratio come from the supplier data sheet or a trial. Common synergistic pairs include xanthan with guar or locust bean gum, where the blend gels or thickens more than either gum alone.
Assumptions: the two shares add to 100%; the dose is on the as-mixed batch weight.
Limitations: a ratio that works in one product may not work in another — pH, salt, sugar and heat all change hydrocolloid behaviour, so confirm with a trial.
Rounding: weights to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: A 100 kg batch at 0.50% total hydrocolloid, 70% first gum: total = 500.00 g, first gum 350.00 g, second gum 150.00 g.

Enter values above to see results.

Typical total hydrocolloid doses are 0.1–1.0% of the batch. Check the supplier data sheet for your gums before fixing the ratio. Tool 209 of 500 — GIFSQ
