Track frying-oil turnover: how fast fresh oil replaces the fryer charge, how many days one turnover takes, and how much oil has been added.

Try sample values — fills the form with the worked example below.

–
Turnover per day
–
Days per turnover
–
Total oil added (L)
Equation: Turnover per day = fresh oil added per day ÷ fryer oil capacity. Days per turnover = fryer capacity ÷ fresh oil added per day. Total oil added = fresh oil added per day × days tracked. Volumes must be in the same unit (litres here).
Method: Frying-oil management practice: turnover measures how fast the fryer charge is refreshed by topping up. One full turnover means a volume equal to the whole charge has been added.
Assumptions: the fryer is topped up to the same level each day; oil removed with the product and by filtering is replaced by the fresh oil added.
Limitations: turnover does not measure oil quality — test total polar compounds and free fatty acids to decide when to discard the oil.
Rounding: turnover per day to 4 decimal places; days per turnover and total added to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: a 20 L fryer topped up with 4 L a day, tracked for 7 days. Turnover = 4 ÷ 20 = 0.2000 per day; one turnover takes 5.00 days; total added = 28.00 L.

Enter values above to see results.

Typical turnover: 0.15–0.30 of the charge per day. Below 0.10 the oil ages quickly; discard decisions still need a quality test. Tool 119 of 500 — GIFSQ
