Reading within limits?
–
Deviation
–
Run compliance (%)
Equation: Within limits when low ≤ reading ≤ high. Deviation = low − reading when below the low limit, or reading − high when above it; 0 when within limits. Deviation (%) = deviation ÷ the limit crossed × 100. Compliance (%) = (total readings − readings outside limits) ÷ total readings × 100.
Method: CCP monitoring per Codex CAC/RCP 1-1969 (Rev. 2020), HACCP Principle 4: planned measurements at each CCP, compared with the critical limit. ISO 22000:2018 clause 8.5.4.3 requires monitoring records that show who measured, when, and the result.
Assumptions: all three temperatures are on the same scale; the run counts are for the same CCP and the same monitoring period.
Limitations: one reading inside the limits does not prove the CCP is under control — look at the run compliance and the trend, not a single point. A reading outside the limits triggers corrective action (Tool 246).
Rounding: deviation to 2 decimal places; compliance to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: Limits 70–75 °C, reading 78 °C, run of 40 readings with 2 outside: outside limits, deviation 3.00 °C (4.00%), compliance 95.00%.

Enter values above to see results.

A reading outside the limits is a deviation — hold the product and start the corrective action workflow (Tool 246). Saved on this device only. Tool 245 of 500 — GIFSQ
