Calculate the specific volume of a loaf from its volume and weight, the standard measure of loaf lightness and crumb openness.
Try sample values — fills the form with the worked example below.
–
Specific volume (mL/g)
–
Density (g/mL)
–
Loaf volume (L)
Equation: Specific volume (mL/g) = loaf volume (mL) ÷ loaf weight (g). Density (g/mL) = 1 ÷ specific volume.
Method: AACC 10-05.01, Baking Quality of Flour — loaf volume by rapeseed displacement, weighed after cooling. Specific volume is the volume divided by the cooled loaf weight.
Assumptions: the loaf is fully cooled before weighing; the volume is measured by seed displacement or an equivalent volumetric method.
Limitations: specific volume alone does not describe crumb texture, crust or flavour; very large loaves read slightly higher because of the crust-to-crumb ratio.
Rounding: specific volume and volume to 2 decimal places; density to 4 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.

Worked example: a loaf of 1500 mL volume weighing 400 g. Specific volume = 1500 ÷ 400 = 3.75 mL/g; density = 0.2667 g/mL.
Enter values above to see results.
Typical specific volume: pan bread 3.5–5.5 mL/g, wholemeal bread 2.5–4.0 mL/g, dense rye below 3.0 mL/g. Tool 104 of 500 — GIFSQ
