Measure the weight lost in the oven from dough piece to baked loaf, and the baked yield that remains.

Try sample values — fills the form with the worked example below.

–
Baking loss (%)
–
Weight lost (g)
–
Baked yield (%)
Equation: Baking loss (%) = (dough piece weight − baked loaf weight) ÷ dough piece weight × 100. Baked yield (%) = 100 − baking loss.
Method: Bakery production weighing, consistent with the bake-loss recording used in the AACC 10-10.03 straight-dough procedure: weigh the scaled dough piece, bake, cool, and weigh the loaf again.
Assumptions: both weights are for the same loaf; the baked loaf is weighed after cooling to room temperature.
Limitations: cooling loss after weighing is not included; loss depends on loaf size, crust area, oven humidity and bake time, so compare only loaves of the same size and bake.
Rounding: loss, weight lost and yield to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.
Worked example: a 500 g dough piece bakes to 440 g. Baking loss = (500 − 440) ÷ 500 × 100 = 12.00% (60 g lost); baked yield = 88.00%.

Enter values above to see results.

Typical baking loss: pan bread 10–15%, rolls 12–18%, large hearth loaves 15–20%. Tool 105 of 500 — GIFSQ
