Dose an antioxidant on the fat phase of a batch: the fat weight, the antioxidant weight, and the dose as a share of the Codex GSFA limit you enter.
Try sample values — fills the form with the worked example below.
–
Fat in the batch (kg)
–
Antioxidant (g)
–
Of the limit used (%)
Equation: Fat (kg) = batch (kg) × fat (%) ÷ 100. Antioxidant (mg) = dose (mg/kg fat) × fat (kg). Limit used (%) = dose ÷ maximum limit × 100.
Method: Antioxidant dosing on the fat phase, as Codex GSFA CXS 192-1995 expresses many antioxidant limits (for example BHA and BHT limits are commonly stated on the fat or oil basis for the food category). The EU (Regulation 1333/2008) and US (FDA 21 CFR) limits can differ from the Codex limit — enter the limit for your exact food category and jurisdiction.
Assumptions: the antioxidant is evenly distributed through the fat phase; the dose and the limit are both on the fat basis.
Limitations: dosing on the fat basis and on the whole-batch basis give different answers — never mix the two, and confirm the basis in the regulation before use.
Rounding: fat to 2 decimal places; antioxidant to 2 decimal places; limit used to 2 decimal places; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.

Worked example: A 100 kg batch with 20% fat at 200 mg/kg on the fat: fat = 20.00 kg; antioxidant = 200 × 20 = 4,000 mg (4.00 g), which is 100.00% of a 200 mg/kg Codex GSFA limit.
Enter values above to see results.
Many antioxidant limits are on the fat basis, not the whole batch. Check the basis in the regulation — it changes the answer. Tool 213 of 500 — GIFSQ
