Analyse a Brabender amylograph pasting curve: enter pasting temperature and the peak, trough and final viscosities to get breakdown, setback and total setback.
Try sample values — fills the form with the worked example below.
–
Breakdown (BU)
–
Setback (BU)
–
Total setback (BU)
Equation: Breakdown (BU) = peak viscosity − trough viscosity. Setback (BU) = final viscosity − trough viscosity. Total setback (BU) = final viscosity − peak viscosity.
Method: Brabender amylograph, AACC 22-10 and ICC 126/1. A flour-water slurry is heated at a steady rate while viscosity is recorded: the pasting temperature is where viscosity first rises, the peak is the maximum on heating, the trough is the minimum at 95 °C, and the final viscosity is read after cooling.
Assumptions: the slurry was prepared at the method concentration and heated at the standard rate; the readings used are from one continuous run.
Limitations: breakdown and setback are comparative indicators, not specification limits on their own; they shift with flour concentration, heating rate and amylase activity, so compare runs made the same way.
Rounding: all viscosities shown as whole BU; intermediates unrounded.
This is a calculation aid, not a laboratory report — confirm against your accredited method before citing a value.

Worked example: Pasting temperature 68 °C; peak 650 BU, trough 320 BU, final 780 BU. Breakdown = 650 − 320 = 330 BU; setback = 780 − 320 = 460 BU; total setback = 780 − 650 = 130 BU. High breakdown with high setback points to fragile granules and strong retrogradation.
Enter values above to see results.
Breakdown guide: under 100 BU low, 100–300 BU moderate, over 300 BU high. Setback over 400 BU points to strong retrogradation. Tool 096 of 500 — GIFSQ
