SOP: Preparation of the Pickle Sample for Analysis

GIFSQ — Global Institute for Food Safety & Quality

Principle

A representative composite sample is prepared from the pickle container so that all determinations (salt, acidity, oil, solids) are carried out on the same homogeneous material. Sampling and container examination follow the procedure for canned foods, and the product is blended before weighing portions.

Apparatus required

  • Apparatus for sampling, determination of net weight, fill of the container, visual examination, drained weight and refractometric solids as described for canned foods

Procedure

Follow the procedure described for canned foods for sampling, determination of net weight, fill of the container, visual examination, determination of drained weight, and refractometric solids

↓

Blend the material to get a composite sample

Precautions

  • Carry out the visual examination before blending, while the product is still in its original condition.
