Virgin oil is oil that has been extracted from fruit or seed by pressing alone, with no chemical refining or heat treatment afterwards. Because it skips the neutralising, bleaching, and deodorising steps of refining, it keeps more of its natural character: stronger flavour, deeper colour, and higher levels of vitamins, antioxidants, and phytochemicals. Cold-pressed virgin oils are the premium expression of the idea. The trade-off is practical: virgin oils smoke at lower temperatures, cost more, and vary from batch to batch, while refined oils are neutral, stable, and cheap. For dressings and finishing, virgin oil’s flavour is the point; for high-heat frying, refined usually serves better.
