A vegetable parer is another name for a peeler — the small tool for stripping the skin or outer layer from vegetables and fruit. Whether a straight swivel peeler, a Y-shaped speed peeler, or a serrated julienne peeler, the principle is the same: a sharp, short blade that shaves thinly, removing peel with minimal flesh. It is faster, safer, and less wasteful than paring with a knife for potatoes, carrots, cucumbers, and similar produce. A sharp parer glides; a dull one tears and slips, which is when accidents happen — blades are cheap to replace. Beyond peeling, it shaves vegetable ribbons for salads and garnishes, making it one of the hardest-working tools in the drawer.
