Synonym for pentanoic acid. Volatile fatty acid comprising 5 carbon atoms and a single carboxylic acid group. Contributes to the aroma of mature cheese. Uses include as a reactant in production of aroma compounds and flavourings. Also one of the main malodorous pollutants from livestock houses.
