Synthetic bright yellow pyrozole dye used in artificial colorants for foods and beverages. In aqueous solution, tartrazine shows high stability when exposed to acids and alkalis, moderate stability to light and heat (stable at extrusion and baking temperatures) and poor stability in the presence of ascorbic acid.
