The sous-chef is the second in command of a restaurant kitchen, the assistant to the head chef and the person who runs the pass when the chef is away. The title comes from the French for under-chef, and the role is the backbone of the brigade: translating the head chef’s vision into daily execution, managing the team, ordering, and holding standards through every service. A great sous-chef combines elite cooking skill with leadership, remaining calm when tickets pile up and the dining room fills.
