Soft-scoop ice cream is ice cream formulated with additives that keep it soft and easy to serve straight from the freezer, without the rock-hard freeze of traditional styles. The food safety concern is real: soft-serve and soft-scoop products have been linked to Listeria contamination, since the machines and mixes can harbour the bacterium, which is why pregnant women and other vulnerable groups are advised to avoid them. Commercial soft-serve machines need rigorous cleaning. The texture is engineered for immediate pleasure, but the hygiene behind it must be equally engineered.
