A sfumatrice is a machine for extracting the essential oil from citrus peel, used in the flavour and fragrance industries. The name comes from the Italian for the fragrant mist released during extraction. Citrus oils sit in tiny sacs in the coloured zest, and the sfumatrice ruptures them mechanically, classically by pressing the fruit against abrasive surfaces or by needling the peel, then centrifuging the oil from the resulting emulsion. Cold-pressed citrus oils captured this way carry the fresh, vivid aroma that distilled oils lack, which is why they flavour beverages, confectionery, and perfumes. The equipment must work quickly and coolly: heat and delay degrade the delicate top notes that make citrus oil valuable.
