A sandwich tray is a large serving tray arranged with a selection of small sandwiches, a staple of buffets, meetings, and celebrations. The sandwiches are typically cut into triangles, fingers, or quarters for easy handling, with a variety of fillings, egg and cress, ham and mustard, smoked salmon, cheese and pickle, to suit different tastes and dietary needs. Presentation matters: neat rows, garnished platters, and labelled fillings for allergen awareness. For caterers, sandwich trays are efficient to produce in volume but carry food safety duties: the fillings are high-risk, so trays must be kept chilled, time at room temperature strictly limited, and leftovers discarded. It is the workhorse of British catering, from office lunches to funeral teas.
