Recipe engineering is the systematic design, development, and testing of a commercial recipe for manufactured food. Unlike home recipe writing, it must deliver a product that can be made at scale, batch after batch, within cost targets, legal limits, and shelf-life requirements. The engineer balances ingredient functionality, processing behaviour, sensory quality, nutrition, and price, adjusting formulations through pilot trials and factory tests. Every change is documented, from raw-material specifications to critical process parameters, so production, quality assurance, and regulators all work from the same controlled formula. Sensory panels and consumer tests validate that the engineered recipe still delights.
