The puy lentil is a small, dark blue-green lentil grown in the volcanic soils around Le Puy in the Auvergne region of France, where it holds protected designation of origin status. It is prized for its distinctive peppery, earthy flavour and its ability to hold its shape when cooked, never collapsing into mush like red lentils. That firm texture makes it the lentil of choice for salads, warm side dishes, and elegant presentations where appearance matters. It cooks in about twenty to twenty-five minutes without pre-soaking and pairs beautifully with mustard vinaigrette, roasted vegetables, and smoked meats.
