A propeller mixer is a food-processing mixer built around a vertical or angled shaft carrying one or more propeller-shaped blades, lowered into a tank or vessel. Driven at moderate to high speed, the blades push liquid downward and set up a strong axial circulation that blends, dissolves, suspends, or heats the contents. It suits low- to medium-viscosity duties such as mixing brines, syrups, sauces, dairy blends, and cleaning solutions, where it gives fast, uniform results with modest power draw. Blade diameter, pitch, speed, and position are chosen to avoid dead zones and excessive air entrainment, which would cause foaming or oxidation. Hygienic versions use smooth stainless-steel construction and sealed drives so the mixer can be cleaned in place between batches.
