Pentapotassium triphosphate is a potassium salt of triphosphoric acid, designated E450 in the European additive system, used as an emulsifier, stabiliser, and sequestrant in processed foods. As a polyphosphate, it binds metal ions that catalyse oxidation and discoloration, stabilises emulsions, and in meat products increases water-holding capacity by raising pH and dissociating actomyosin, the protein complex that toughens meat. Typical applications include processed cheese, canned seafood, ham, and instant noodles. The potassium form is chosen where sodium reduction is desired, since it delivers phosphate functionality without adding sodium. Like all phosphates, usage is limited by regulation, and high overall phosphate intake from processed foods is debated in relation to bone and kidney health, though authorised levels are considered safe.
