New product development (NPD) is the structured process by which food companies create original products or improve existing ones, from initial concept through to launch. It typically runs through stages: consumer insight and trend analysis, concept screening, recipe formulation and bench-top trials, scale-up in pilot plants, shelf-life and safety validation, sensory testing, packaging design, and finally market launch with post-launch review. In the food industry, NPD is constrained by food safety law, labelling rules, allergen management, and cost targets in ways that other sectors rarely face. Stage-gate systems are common, killing weak concepts early to protect development budgets. Success depends on cross-functional teams spanning marketing, food science, procurement, quality, and manufacturing, since a product that tastes superb but cannot be made safely at scale is a failure.
