Glyceryl lactostearate — listed on ingredient labels as E472b — is a food emulsifier made by esterifying glycerol with lactic acid and stearic acid (a long-chain fatty acid). It belongs to the E472 family of lactic acid esters of mono- and diglycerides, workhorse emulsifiers in bakery and confectionery. Its job is to marry fat and water phases that would rather separate: in bread and cakes it strengthens dough, improves crumb softness, and extends shelf life by slowing starch retrogradation; in whipped toppings and desserts it stabilises foams and emulsions. Like all approved additives, it has been safety-assessed and is permitted only within specified limits — a quiet, technical ingredient behind better texture.
