Extra virgin olive oil is the olive oil produced from the first pressing — more precisely, the highest grade, extracted mechanically from fresh olives without heat or chemicals, with free acidity below 0.8% and no sensory defects. The “extra virgin” grade demands both chemistry and tasting: laboratory limits on acidity, peroxides, and purity, plus a panel test confirming fruity aroma and the absence of faults. Good oils show the peppery bite of polyphenols and the grassy, artichoke notes of fresh fruit — flavours that refined oils lose. Nutritionally it carries monounsaturated oleic acid and antioxidant polyphenols, the basis of its Mediterranean reputation. Fraud is the industry’s shadow — mislabelled grades are a perennial scandal — which is why provenance, certification, and the peppery catch in the throat matter to buyers.
