A deli counter is the serviced counter in a supermarket or food shop that sells delicatessen products — sliced cooked meats, cheeses, pâtés, olives, prepared salads, and hot or cold ready-to-eat lines — cut or portioned to order. It brings the traditional delicatessen experience into the modern store: staff slice ham to the customer’s chosen thickness, weigh out coleslaw, and build sandwiches while the shopper watches. The format sells freshness, customisation, and theatre, and it commands better margins than pre-packed equivalents. Behind the glass, the disciplines are strict — chilled display at safe temperatures, separation of raw and ready-to-eat foods, scrupulous slicer cleaning between products to control allergens and Listeria, and short shelf lives on opened packs.
