A cheese cutter is a tool for slicing cheese, in its simplest catering form a board fitted with a taut wire that cuts clean slices as it is drawn down through the block. The wire’s thin profile slices soft and semi-hard cheeses without the dragging and sticking of a knife blade. Other designs include handled wire slicers, plane-style cutters for hard cheeses, and large guillotine cutters for whole wheels. Clean cuts matter for presentation and portion control in delis and buffets. The wire must be kept taut and clean, and replaced when it stretches, to maintain neat, even slices.
