Cannelloni are wide tubes of pasta designed to be stuffed with fillings such as ricotta and spinach, minced meat, or mushroom, then baked in sauce. The tubes may be bought dried or made by rolling fresh lasagne sheets around the filling. Baking in tomato or béchamel sauce lets the pasta absorb moisture and flavour while the top browns and crisps. It is a comforting baked dish that combines carbohydrate from pasta with protein from the filling. As with all stuffed pasta, the filling must reach safe temperatures throughout, and the dish should not sit at room temperature for long before serving.
