A baking tray is a flat metal sheet-pan for oven baking, the everyday workhorse of home and professional kitchens. Typically made of aluminum or steel, sometimes with nonstick coating, it carries everything from roast vegetables to sheet cakes, its low sides allowing hot air to circulate while containing juices. Heavier trays distribute heat more evenly and resist the warping that twists thin pans in hot ovens. In commercial bakeries, standardized tray sizes fit rack ovens and proofers in efficient rotation. Maintenance is simple but matters: built-up carbonized residue insulates unevenly and can taint flavors, while scratched nonstick coatings lose their release. The unglamorous baking tray does more daily work than almost any other piece of kitchen equipment.
