A palette knife is a kitchen tool with a long, thin, flexible, blunt-edged blade used for lifting, turning, spreading, and smoothing food. Offset versions, with the handle raised above the blade, glide under delicate items and spread icing without knuckles dragging; straight versions lift biscuits from trays and loosen cakes from tins. In cake decorating it is indispensable for applying buttercream, smoothing ganache, and creating textured finishes. The flexibility is calibrated: stiff enough to lift, supple enough to follow contours. Beyond baking, cooks use palette knives to flip fish, spread pâté, and portion soft desserts. Professional kitchens keep several sizes, and the tool’s simplicity belies its importance, few implements touch finished food as directly, making cleanliness and a nick-free edge matters of both presentation and hygiene.
