A ready-blended mixture of dried herbs for seasoning, typically combining thyme, marjoram, oregano, basil, sage, and parsley in proportions suited to general cooking. Commercial mixed herbs save time and suit dishes such as soups, stews, stuffings, and tomato sauces where a rounded herbal background is wanted. Some blends target specific cuisines, like herbes de Provence or Italian seasoning. Dried herbs are more concentrated than fresh, so smaller quantities suffice, and they should be stored airtight away from light to preserve their volatile oils. While convenient, discerning cooks often prefer blending fresh herbs for brighter, more distinct flavours.
