A distinctive deep-bodied sea fish, Zeus faber, found in the eastern Atlantic and Mediterranean. It has a large, laterally flattened olive-yellow body, long spiny dorsal fins, a big mouth, and a characteristic dark spot ringed in yellow on each flank, said to be the thumbprint of St Peter. John Dory lives near the seabed at moderate depths and feeds on smaller fish. Its flesh is white, firm, and delicately flavoured, prized by chefs for grilling, poaching, and pan-frying. The fish yields relatively little meat for its size because of its thin profile and large head, making it a premium-priced species. Sustainable sourcing matters, as some stocks face fishing pressure.
