A griddle scraper is the spatula-like tool used to scrape burnt food deposits, carbonised grease, and residue from a griddle’s cooking surface. Typically a flat, rigid blade of metal or heat-resistant plastic on a handle, it is worked across the hot plate — often with a little water or oil to loosen debris — to keep the surface clean and smooth between batches. Regular scraping is essential griddle craft: built-up carbon causes sticking, imparts bitter, burnt flavours, and can harbour old grease that smokes and taints fresh food. In commercial kitchens the scraper is in constant use during service, and end-of-day deep cleaning with griddle stones or chemicals restores the plate.
