A food chopper, in commercial kitchen terminology, is a heavy-duty food processor in which the bowl rotates in the opposite direction to the spinning cutting blades. This counter-rotation continuously feeds product into the blades, giving fast, even chopping, mincing, and emulsifying of large volumes with less operator intervention than a standard processor. Caterers use it for preparing minced meat, vegetable mirepoix, breadcrumbs, nut pastes, and emulsified sauces. The sealed bowl and powerful motor handle dense loads, while variable speeds and interchangeable blades suit different textures. As with all equipment processing ready-to-eat foods, thorough cleaning and sanitising between uses is essential to prevent cross-contamination and bacterial growth in trapped residues.
