Brown braising is a cooking technique in which meat is first seared in hot oil until browned on all sides, then braised slowly on a bed of chopped root vegetables with stock or wine. The initial browning drives Maillard reactions that build deep, savoury flavour and rich colour, which a pale braise would lack. The vegetables form a natural rack that lifts the meat from direct heat while contributing sweetness to the braising liquid. After hours of gentle cooking, the liquid is strained and reduced into a glossy sauce. The method suits tough cuts like shin, cheek, and oxtail, transforming them into tender, intensely flavoured dishes.
