The concern is osmophilic yeasts and bacteria that survive in high-sugar environments and can ferment in the sealed bottle, causing off-flavours, turbidity, and bursting containers. Bottler’s sugar is tested to tighter limits for total plate count, yeasts, and moulds, and is handled to minimise moisture uptake that would encourage microbial growth. Its use is a preventive quality measure in beverage manufacturing, where a single contaminated batch can spoil thousands of bottles and damage brand reputation.
