A cooking device that steams food at normal atmospheric pressure, without the sealed, pressurized chamber of a pressure steamer. It exploits a powerful heat-transfer principle: when steam condenses on the cooler surface of food or its container, it releases its latent heat directly onto the product, cooking rapidly and evenly at around 100 degrees Celsius. Commercial atmospheric steamers handle large volumes of vegetables, rice, and prepared dishes in catering and institutional kitchens, preserving color, texture, and nutrients better than boiling since nothing leaches into cooking water. They are simpler and cheaper than pressurized systems but cannot exceed the boiling point, so they suit gentle cooking rather than the fast sterilization that pressure enables. For batch catering, they are workhorses.
