Xylan 1,4-β-xylosidases
Enzymes classified as EC 3.2.1.37 that hydrolyse 1,4-beta-D-xylosidic linkages, clipping xylose units one by one from the non-reducing ends of xylan chains and xylo-oligosaccharides. They complete the breakdown that endo-xylanases start: the endo enzymes cut the backbone internally into fragments, and the xylosidases finish the job by releasing free xylose. They work in concert with other hemicellulases in baking, brewing, and animal-feed applications, where dismantling plant fibre improves dough handling, wort filtration, and nutrient availability from fibrous feeds. Their activity is measured when formulating commercial enzyme blends, since the balance between endo and exo activity decides the sugar profile released. They are standard components of hemicellulase preparations.
