Wine gums

Wine gums are chewy sugar confections made from sucrose and glucose set with gum arabic or gelatin, usually fruit-flavoured. The name fools no one on the factory floor: they contain no wine, the varieties having been named after wines and spirits with colours and flavours merely suggesting port, sherry, or champagne. The gelling agent gives the firm elastic bite, and texture is the manufacturing test — neither sticky nor tough — demanding precise cooking of the sugar mass and controlled setting. These classic British sweets are known for clean flavour release and a long chew. Packaging moisture control keeps them from drying out or turning sticky on the shelf.
