Vine leaves
The edible leaves of grapevines (Vitis species), used as wrappers for stuffed dishes such as dolmades in Mediterranean and Middle Eastern cuisines. Vine leaves are harvested young, then used fresh, blanched, or brined; brining in salted, acidified solution preserves them year-round. They contribute a tangy, slightly astringent flavour from organic acids and tannins. Food-safety considerations include pesticide residues — since vines are sprayed intensively, leaves must come from managed sources with pre-harvest intervals observed — and the microbiological safety of brined products, where adequate acidity and salt prevent pathogen growth during ambient storage.
