Vegetable nectars
Ready-to-drink vegetable beverages made by adding water and/or sugar — plus optional acids, flavourings, or other ingredients — to vegetable juices. They are the vegetable counterpart of fruit nectars: diluted, sweetened drinks with lower juice content than pure juices, offering milder taste at lower cost, typically built on carrot or tomato juice. Regulations set minimum juice contents and labelling declarations that separate nectars from mere juice drinks. Thermal processing and hygienic filling ensure safety, while formulation must balance sweetness, acidity, and vegetable character for consumer acceptance.
