Valine
An essential branched-chain amino acid important for growth, muscle coordination, and nitrogen balance. Valine — like leucine and isoleucine — cannot be synthesized by humans and must come from dietary protein; good sources include meat, dairy, eggs, soy, and legumes. In food science, valine participates in Maillard and Strecker reactions during heating, contributing to roasted and malty flavour notes. It is also a key nutrient in animal feed formulation and sports-nutrition products. Fermentation industries monitor valine because yeast assimilates it during brewing, influencing fusel-alcohol production and beer flavour profiles.
